Fresh Tomato Pasta
Recipe provided by Kirsten Reinford & Joshua Farm, Harrisburg, PA
Prepare ahead of time:
Combine the following;
2 Cups Fresh, Coarsely Chopped Tomatoes (Drained)
2 Cloves Garlic
1/8 Cup Chopped Basil (Rough Handful)
¼ Cup Olive Oil
Allow to sit at room temperature for approx. 2 hours.
At meal time:
Cook pasta of your choice per package directions (Kirsten uses bow tie), once drained combine with tomato mixture. Top with freshly grated Parmesan.
Much simpler than simmering sauce on the stove for hours and it can be prepared in the morning and refrigerated for use during an evening meal (allow to return to room temperature before combining with pasta).
